- Holly Honey: All-Natural, Raw and Unfiltered Holly Honey from Florida. Also called Gallberry Honey, this special honey is medium sweet, with pleasant floral and smokey notes.
- Description & Origin: The gallberry low bush (ilex glabra) is a member of the holly family, with spiked evergreen leaves. In June, the plants produce small, white flowers.Gallberry grows in abundance in the pine forests of Northern Florida. Several different beekeepers produce this honey for us, and they set out their hives in various locations in Gulf, Liberty and Clay counties.
- Color & Taste: The color of holly honey ranges from White to Extra Light Amber. It has a very pleasant floral flavor, with faint smokey notes. It resists crystallization, and is our second most popular honey variety (after tupelo, of course).
